BEC's Meatless Monday BEC



BEC is trying out something new today, a vegetarian BEC.  We are not ones to discriminate here at BEC and good food is good food, no matter what.  We started out with a fresh loaf of French bread, the perfect base for a veggie sandwich, nice and substantial.  Then we decided that although this will be a veggie BEC we need to have a little indulgence as well, hence hash browns.  While those were cooking, we sliced some fresh tomato, just delivered from Boston Organics.  A light grill to the tomatoes with fresh ground pepper would be perfect to enhance the flavor.  Then it was on to sautéing some yellow pepper for added taste and color.  While those veggies were cooking we opened a box of Morning Star Veggie Sausage Patties, a great vegetarian breakfast item.  We quickly popped them in the microwave but finished them off in the pan with the peppers for added flavor and texture. 

Once the French bread was toasted it was time to build a sandwich.  First a little Earth Balance Natural Buttery Spread, our hash brown, Morning Star sausages, grilled tomatoes, lightly sautéed yellow pepper strips and freshly chopped chives.  This is an excellent breakfast sandwich with wonderful flavors, and a nice way to mix it up over here at BEC. 

Before I forget, BEC added an extra side dish to this breakfast sandwich.  Vegetarian eating is a great way to be healthy but you also have to eat healthy foods that fill you up.  So we added a waffle with natural peanut butter, fresh sliced banana and 100% pure maple syrup, a deliciously sweet finish.  Going vegetarian even one day of the week is great for the environment as well as your body and animal community, as you can see from description and photos, it’s also very delicious.  Consider participating in Meatless Mondays.  Happy eating!
